Apple Spice Pancakes
1 1/4 cup flour (fresh milled or white all purpose)
2 tsp baking powder
1 Tabl. Honey (1 Tabl sugar)
1/4 tsp apple pie spice
1 large egg
1 cup milk
2 Tabl vegetable oil
Mix all ingredients in a mixing bowl. Meanwhile, let skillet or griddle get hot. When ready, pour batter onto hot griddle or skillet and let cook until bubbles appear on top and then flip pancake over. Wait a few minutes for steam to come up and pancake is done.
Cook's note: We use this a lot in the fall and winter and fix it for supper (Brupper is what my kids call it) Add some fruit and bacon and supper is done!
Also, if you make this without the spice, adding chocolate chips or blueberries onto the pancake after you have poured it into the pan is really good. Flip as usual.
